We’re the oldest surviving producers of the world-famous Kendal mint cake and have been making this sweet sensation for over 150 years.
Despite advances in the modern sweet making world, we still produce Kendal mint cake in almost the same way the Victorians did in the 19th century. It clearly works, so why would we change things?
What ingredients do we use?
Kendal mint cake is simply made from glucose, sugar, water and our unique blend of peppermint oil. Nothing else is added. This makes it the perfect treat for vegans and vegetarians as no animal products are used.
Even our chocolate enrobed mint cake is vegan-friendly as we use rich dark chocolate, which doesn’t contain dairy.
How do we make Kendal Mint Cake?
Our methods for making Kendal mint cake have barely changed over the last 150 years. The glucose, sugar and water are heated in large copper pans. We use copper pans because they are good at conducting heat. Far better than stainless steel or iron. Because the copper spreads the heat evenly, the mixture is less likely to burn, and our producers can control the heat of the mix much more easily.
As the mixture is heated to boiling point, it is stirred continuously. It’s this stirring that helps give the mint cake its opaque, cloudy appearance.
Once the mixture is ready, it’s taken off the heat, and our special blend of peppermint oil is added.
Peppermint is believed to have medicinal benefits. It’s an anti-inflammatory and can help ease stomach and digestive issues. That’s why many walkers, hikers and runners eat mint cake.
How do we transform it into bars?
Once the mixture is cooled to the right temperature, it’s hand-poured into shallow moulds. The moulds are placed on iron cooling tables to help the mixture solidify. The mint cake bars are normally formed in around 20 minutes.
The fondant is then broken by hand into bars. This must be done carefully because the mint fondant is still quite soft.
Once they have been made into bars, they either go to be wrapped or covered in thick, rich Belgian chocolate.
Why is it called the original energy bar?
Since it was first invented, Kendal mint cake has been the food of choice for adventurers, mountaineers, and hikers. That’s because it provides a fast energy boost. Glucose is easily digested and gives the body the fuel it needs to keep going in difficult conditions.
The peppermint flavour also comes in handy when walking and climbing high altitudes. The higher we go, the less our taste buds can sense, so the strong minty flavour is refreshing and tasty.
Does mint cake come in different varieties?
Yes, it does. Our original white mint cake is extremely popular. But, we also have brown mint cake bars, which are made from brown sugar.
We were also the first mint cake producer to cover our mint cake in delicious dark chocolate. Chocolate and peppermint work perfectly together.
